Someone for oats and vegetables delicious fritters? This fritters are perfect for a breakfast which can be served with some salad and yoghurt, so that you can dip the fritters into it.

I made delicious oat and vegetable fritters and served them with some red bitter chicory salad and fresh ordinary yoghurt. Very easy to make but it tastes delicious! Perfect healthy breakfast which is quick to prepare!

My grandma always makes different vegetable fritters for breakfast, so I thought why not prepare them myself for my husband and me.

Those fritters can be made of different combinations of ingredients. Sky is the limit! THey can be just with veggies, or mixed with the meat, different rice and so on…

INGREDIENTS FOR VEGETABLE FRITTERS:

  • 100g normal oats
  • 5 eggs
  • Leek
  • Grated carrot
  • Coconut oil to fry
  • Salt and pepper
  • Yogurt

HOW TO MAKE VEGETABLE FRITTERS

  • Prepare the oats and put them into a bowl.
  • Grate the carrot.
  • Cut the leek into very small pieces.
  • Prepare the eggs.
  • Put everything in a one bowl and stir it all together until the mixture is combined.
  • Season it with salt and pepper.
  • Bake the fritters on a coconut oil until golden brown and crispy.
  • Cut some salad and serve the fritters with it and add the yoghurt like a dip sauce.
