This simple Baba Ganoush Dip is made of roasted eggplants, garlic, and olive oil. Creamy and healthy dip to serve with bread, chips or vegetables!

Today was not so hot outside and because of that, I decided to make 2 new recipes. One was Baba Ganoush dip, which recipe you will find here and Carrot Zucchini Bread which recipe will be online in a couple of days.

 

I was dipping that healthy carrot zucchini bread into Baba Ganoush Dip and I think I found my new favorite healthy dip! My husband loved it also! He ate everything 😀

 

 

WHAT IS BABA GANOUSH DIP?

Baba Ganoush is a simple healthy puree/mash or dip made of roasted eggplants, garlic, and olive oil. IT can be served as a dip for chips, vegetables or bread or as a side dish.

 

For this Baba Ganoush Dip, I was using roasted eggplants, roasted garlic, extra virgin olive oil, simple spices like salt, red paprika, black pepper and parsley for a decoration.

 

It turned out amazing! So delicious side dish. A combination with a healthy bread you get totally healthy lunch or dinner!

 

 

This Dip will definitely stay on the list of my favorite healthy veggie dips.

INGREDIENTS FOR BABA GANOUSH DIP

  • 2 eggplants, roasted
  • 3 cloves garlic, roasted
  • 3 tbsp extra virgin olive oil
  • 1/2 tsp sea salt
  • 1/3 tsp black pepper
  • 1/3 tsp red paprika powder
  • 1/4 cup parsley, chopped

 

TOOLS YOU NEED

  • Frying pan to roast eggplants before blending.
  • Cutting board to cut eggplants and chop garlic and parsley.
  • Hand blender to blend eggplants and garlic.

 

HOW TO MAKE BABA GANOUSH DIP?

  • Heat up a frying pan and add olive oil.
  • Wash eggplants and cut them in circles.
  • Roast the eggplants until light brownish color on both sides.
  • Cut garlic cloves in big pieces and roast them too.
  • Place roasted eggplants and roasted garlic into the blender.
  • Add salt, pepper, red paprika and olive oil and blend it for just a couple of seconds.
  • Transfer the dip into nice serving dip bowl, add one tbsp of olive oil and chopped parsley on the top.

 

HOW TO SERVE BABA GANOUSH DIP?

You can serve Baba Ganoush like a dip or just like a veggie side dish.

 

I ate this dip with carrot zucchini bread. The recipe for this bread will be online in a couple of days.

 

I spread the dip on each bread slice and it was amazing! Goes really nice with carrot zucchini bread.

 

Also, you can serve it with some tortilla chips too!

Ingredients
  • 2 eggplants roasted
